This recipe is based upon a traditional strawberry shortbread dessert.

However, we are not adding any sugar to this shortbread recipe.

The original strawberry shortcakes were made with fat, such as lard, which made the cakes crisp and thus, perfect for this recipe. "Shortcake" refers to the method of making the biscuits that are crisp for this recipe.

Strawberry shortcake is made in layers. The layers include the bread (or sometimes cake), strawberries, and whipped topping. This recipe works because the ingredients and the layers work so well together.

Strawberry shortcake tastes like strawberries that are surrounded in fluffy whipped topping. The bread layer(s) help both balance these flavors and add a bit of crunch to the dessert.

  2. Don't like biscuits? This recipe could also work using a sugar free yellow cake mix and and baking in a cupcake pan or similar pan.
  3. Can you use jam instead of strawberries? Yes, just make sure that you are using strawberry jam that has no added sugar.
  4. This recipe uses fresh strawberries. However, frozen ones can be used as long as there is nothing added, such as sugar, to the packaging.

How to store strawberry shortcake.

This recipe is really best when put together just before serving. If you do have leftovers, I would suggest that you store the parts of this separately.

Ingredients needed to make strawberry shortcake with no added sugar.

This recipe for shortcake contains three parts. The first is making the biscuits. Then we will layer the biscuits with strawberries and whipped topping.

Ingredients needed for this recipe.

  • Low carbohydrate biscuits. You can make low carb biscuits using the recipe or biscuit mix of your choice. Regular biscuits will also work.
  • Sugar free whipped topping. You can make your own sugar free whipped topping or purchase it at your local grocery store. However, you can usually find it in tubs in the freezer section.
  • Strawberries. I prefer fresh strawberries in this recipe as I seem to always have them around. You can use the frozen kind but, make sure that they are close to room temperature and do not contain any added ingredients (such as sugar).
  • Optional- toppings such as additional strawberries, other kinds of berries such as blueberries, or chopped nuts.

How to serve shortcake.

This is one of those recipes that works best when served fresh.
That is, assemble the layers or parts and then serve it.


Strawberry Shortcake does not have to be served by itself.

  • Serve it with vanilla ice cream on the side.
  • Or, try drizzling a bit of syrup on top.
  • This tastes great with a bit of coffee or glass of milk on the side.

How to make Sugar Free Strawberry Shortcake.

  • Prepare the biscuits as directed on the packaging. Allow the biscuits to fully cool as this will make them easier to slice. Also, biscuits that are too fresh may absorb the wet ingredients too quickly.
  • To prepare the cooled biscuits by slicing them in half as this is a layered recipe.
  • For the strawberries, hull them and remove the stems. Then slice the strawberries to about ½" thick.
  • Make your own whipped topping or have your store bought whipped topping uncovered and sitting out for a few minutes to soften up a bit.
  • To put the shortcake together, place a dollop or two of the whipped topping on the bottom portion of the biscuit then place a layer of strawberries on top.
  • Place the top of the biscuit on top and continue layering as desired before serving.

  • 1 ½ cups Sugar Free Whipped Cream
  • 1 ½ quarts Strawberries
